Breakfast Hash (Make this when you have leftover steak)

Have you ever noticed when you have leftover steak, the next day it's just not as good as fresh off the grill or stove?  And you hate to let it go to waste! Here's a great recipe that I've created using leftover steak, and it makes a wonderful, hearty breakfast! Make HASH! 

Here's how you make it:

 

Grab your leftover steak. I've used roast beef and tri-tip for this. Cut cold meat up in bite sized pieces.

 

Chop up a medium onion.

 

Mince a couple cloves of garlic, and chop up a green or red pepper. 

 

Bake 4 med. potatoes. If you happen to have left over baked potatoes, even better. Use them. I put mine in a covered microwave dish and cooked them for about 15 minutes while I was chopping my vegetables. The potatoes fry up better when they have been baked.

 

while the potatoes are cooling (if you aren't using leftover baked potatoes) saute' the onion on medium heat in  2 Tablespoons of butter. Cook until transparent. Next add the minced garlic and peppers. I had a couple left over cobs of corn I cut from the cob and added. Cook for 2 minutes or so. 

 

Next add your chopped up steak.

 

While the steak is warming, remove the skins from the potatoes. And chop the potatoes into chunks.

 

Add the potatoes and 1 tablespoon of butter. 

Here's a close up! It makes your kitchen smell sooooo good! 

Add about 1/2 teaspoon of rosemary, 1/2 teaspoon of thyme,  1/2 teaspoon of dried parsley flakes

and salt and pepper to taste. And if you like, a few drops of Tabasco!  

You can add what ever veggies you want to. I just used what I had on hand. But,  peppers and leftover  corn is always wonderful in hash. Even better, top it with a fried egg!! Now THAT's some good leftovers for breakfast!
